The motivation for this Smoked Salmon Kale Scramble recipe was a power failure due to downed power lines. It’s very loosely based on a couple of other recipes I’ve used over the years. Ideally, you can make this a frittata versus a scramble – especially when the oven is available. NOTE: If you have a gas oven, you can still use the stove top during a power failure by manually lighting each burner.
Smoked Salmon Kale Scramble
6 eggs
1/2 cup Greek Yogurt
1 4 oz package Smoked Salmon cut in pieces
8 oz Frozen Chopped Kale (or fresh)
1/2 cup Frozen Pepper & Onion Blend (or fresh)
1/2 cup of cooked hash browns (optional)
Instructions
In a large skillet, add the Kale, Pepper & Onion blend, and 1/4 cup of water. Using medium heat, cover and skillet steam the veggies until tender. If making the frittata versus the scramble, preheat the oven to 350°. While the veggies are steaming, in a mixing bowl whip the eggs with the Greek Yogurt until well blended. Uncover the skillet and add in cooked hash browns (if using). Finally add in the smoked salmon. Stir briefly and spread the salmon throughout the veggies. Pour the egg mixture over the skillet contents until it is evenly distributed. Cook over medium heat until egg mixture just begins to set.
Scramble Option
Once the egg mixture begins to set, begin scrambling the eggs with the skillet contents until the eggs are fully cooked.
Frittata Option
Move the skillet into the oven and bake until the middle of the frittata is set.
