This is a meal idea without a recipe. Whoa! Don’t leave yet. Stay with me! Just a heads up: This is one of more to come. 🙂
Here are the ingredients:
Zucchini
Onion
Olive oil
Water
Organic Shoyu Soy Sauce
Organic Unsalted Butter
Organic Garlic Powder
Organic Cooked Brown rice
Slice your onion. I typically use 1/2 a onion for each zucchini. Line the bottom of a large skillet with a little Olive oil combined with water. I personally use more water than oil, but do what you prefer. Add the onion to the skillet and sauté until tender. While the onion is cooking, cut your zucchini to your preference. Here is what I do: After removing the top and the end, I cut the zucchini in half vertically. I then cut each piece in half vertically again. I then thinly slice each piece horizontally. Again, make it the way you like it. The easier the better! Add the sliced zucchini to the skillet and stir to combine with the onion. If necessary, add a little more water. Cover, reduce heat and simmer until tender, stirring as needed to prevent sticking. Remove lid and stir.
Move the veggies to the sides of the skillet to make an opening in the middle. With the heat still on simmer, add butter to the center and allow it to melt. I generally use 1 Tablespoon. As the butter melts, sprinkle it with Garlic Powder. Just want to emphasize that I use Garlic Powder as opposed to Garlic Salt. Add the cooked Brown Rice to the center. As a challenge, I try having more veggies to rice and will often limit the cooked brown rice to 1 cup. Begin to mix the rice with the melted butter/garlic and then the rest of the veggies.
Raise the heat to medium and add the Braggs to the skillet to taste. Stir quickly to mix with the veggie rice mixture and avoid sticking. Bragg’s has a flavor similar to Soy Sauce and tastes a bit salty. If it helps start, with 1 Tablespoon and check the taste. Turn off the heat. Voila! Dinner is served.
For those who would like to add cooked meat, put it in the skillet right after you add the zucchini, and before you cover/reduce the heat to simmer. Again as a personal challenge, I use meat almost as a garnish. As always, make it your way. Enjoy!
