Just in time for the holiday season I am sharing my Sweet Potato Treat recipe. I usually make it using freshly baked sweet potatoes, but I always save leftover sweet potatoes from holiday meals (Thanks Mom!) specifically for this recipe. It’s also healthy! The sweet potatoes, coconut, walnuts and even the Greek yogurt offer multiple health benefits. I’ll share those details in a special section after the recipe.

I typically make enough for one serving using a *15 oz CorningWare dish, but I am sure readers can double or triple it to increase the number of servings.
Sweet Potato Treat Recipe
(Makes 1 Serving)
1/2 Cup sweet potatoes cooked and mashed (baked, boiled, or candied)
1 Tbsp Organic Greek yogurt
1 Tbsp Water
1-2 Tbsp Organic Unsweetened Coconut Flakes
1 tsp Organic Coconut sugar (omit if using candied sweet potatoes)
Organic Ground Cinnamon
2 Tbsp Raw Chopped Walnuts
Organic unrefined Coconut oil
Recipe Instructions
>Preheat oven to 350 degrees Fahrenheit
>Coat a small *15 oz CorningWare dish with a little Coconut oil
>Using the same dish, add the mashed sweet potatoes, and mix in the Greek yogurt, water, unsweetened coconut flakes, cinnamon, and sugar (if using)
>Sprinkle chopped walnuts evenly over the top
>Bake for 15-20 minutes or until heated through and lightly brown around the edges

Sweet Potatoes
According to *The Vegetarian Cook’s Bible, sweet potatoes have antioxidant, anticancer, and heart protective properties. Further, they’re a great source of vitamin A, beta-carotene, vitamin C, and fiber. Because they’re naturally sweet, you don’t need to add much sugar.
Coconut
Coconuts are rich in potassium, and have significant amounts of phosphorous and magnesium. I like to use the organic unsweetened variety so as much as possible, I can control the quality and quantity of my sweetener.
Walnuts
In his book *Eat to Beat Disease, Dr. William Li has identified walnuts as one of many “Grand Slammers” since it benefits all five of the health defense systems. Have a look at this quick TikTok video where he mentions walnuts as one of the Medicines hidden in plain sight in our pantry.
Greek Yogurt
Including this ingredient may seem surprising but I use it to add a bit more protein to my treat. 😉 Above I link to one of my other blog posts, which links to the 7 Health Benefits Of Yogurt. Make this recipe vegan by replacing the Greek yogurt with a plant-based alternative. You can also omit the Greek yogurt (and the water) all together and use a bit of plant-based milk to help mix the remaining ingredients.
