Happy New Year! Yes…I missed posting before the end of 2015. But I am posting now.
I recently visited a grocery store and tried the Cilantro Rice Salad available in their Deli. It was delish, and I was sure that I could make it at home. So…I searched the Internet for a recipe and found this one: Cilantro Rice Salad. When I made it, I omitted the pickled jalapeno, cucumber, and diced tomato flesh. I love it because it can be served cold, but with the omissions I made, I can serve it warm as well. Initially, I made it with organic long grain white rice. The next time, I made it with organic short grain brown rice. I have to admit, I preferred the version I made with the white rice. However, once I replenish my supplies, I will try it again with long grain brown rice. Let me know if you try this recipe and whether you enjoyed it… or not.
