Cashew Date Butter is a recipe I originally put together years ago to use whenever I was avoiding dairy. I am no longer avoiding dairy, but I have discovered a new use for it which I will outline in a later post. For now, consider using this to top fruit bowls, or dip apples into, sweeten plain yogurt, or add it to your oatmeal.
Cashew Date Butter Recipe
1 1/2 Cups Raw Cashews
1 Cup Water
1 Medjool Date (or 2 Deglet Dates or 1 Tbsp Date Syrup)
Put water, Cashews, and Dates (or Date Syrup) into a high power blender. I use my Vita Mix. Set the switch to High and turn the Vita Mix on for ~ 10 seconds. Repeat until all cashews have been blended. Pour the Cashew Date Butter into a small mason jar. Store in the refrigerator.
This recipe leaves quite a bit of residue in the blender, so consider making a smoothie, or protein shake. Enjoy!
