This recipe resulted from a freezer full of frozen broccoli! Why did I have a freezer full of frozen broccoli? That is a topic for another post. 🙂 Anyhow, I was trying to think of creative ways to prepare it. Here’s one of my creations.
Broccoli Potato Soup Recipe
2 Cups of Frozen Broccoli
1 Cup of Water
1 Cup of White Potatoes, peeled and cubed
1/4 tsp Salt
2 Tbsp of Unsalted Butter
In a medium saucepan, bring water, broccoli, and the potatoes to a boil. Reduce the heat to simmer, and cook until the vegetables are tender. Using a potato masher and without draining, mash the broccoli and potatoes together in the saucepan. Add the salt and butter. Stir until the butter is melted and well blended. That’s it! Makes 1-2 Servings. Serve it up!
Using the potato masher (versus pureeing the veggies in a food processor or blender) produces a creamy, yet chunky soup with more texture…not to mention less items to clean up.
This soup is quick, easy, and most importantly, very yummy! Yes, yummy! Use the measurements and instructions above just to give the recipe a try.
