After reading *How Not to Die by Michael Greger, M.D. I have been finding it extremely difficult to purchase meat to cook at home. Especially chicken – which for along time I thought to be a safer, healthier meat choice. Now… not so much. Honestly, I am not a vegetarian, and I am nowhere near a totally plant based diet. However I have to tell you, Dr. Greger certainly did a great job of making his case for how a whole food plant based diet can treat and reverse numerous ailments and diseases. NOTE: This is what led to the freezer full of frozen broccoli I mentioned in my Broccoli Potato Soup post.

While I am not a convert – this moment – I do feel motivated to include more green things and less meat in my diet. Towards that end, I came up with this recipe which I feel is a decent compromise. Previously when I made this recipe, the ratio of the ingredients was reversed. Now the chicken is more of an accent, while the leafy greens are the main event.
Baby Spinach & Arugula Chicken Salad
Makes 1-2 servings
3 Cups Organic Baby Spinach & Arugula
3 oz Organic Chicken Breast – Baked and Chopped
3 Tbsp Organic Mayonnaise
1/4 tsp Ground Turmeric
Black pepper to taste
After washing and draining the spinach and arugula, in a large bowl, combine the greens with the chicken, mayonnaise and turmeric. Mix well and refrigerate for a few hours or overnight. Serve as a sandwich, eat as is…or on top of another salad. Notice that I did not list salt as an ingredient. I found that the seasoning from the baked chicken, and the sodium in the mayonnaise was enough. Feel free to substitute the mayo with your favorite salad dressing. I discovered an Organic Miso Ginger salad dressing that I think will be perfect for the next time I try this recipe. Give it a try and let me know what you think.
Regarding the *book by Dr. Greger, I highly recommend reading it. As usual, I borrowed it from the library first. In fact, even after I bought the book, I decided to borrow the audio book from my library so I could get through the material more quickly. Check it out when you get a chance.
