Here’s the Cilantro Lime Rice recipe I promised in my recent Giving Thanks post. This is actually a re-do of my Cilantro Rice Salad post from a few years back. Reading it now, I see I offered very little in the way of details. To be fair what I am adding now, I have learned over the years.

This Group Recipes Cilantro Rice Salad recipe was my starting point and feel free to make that if you wish. However my family prefers it warm so my modifications have become a stand alone recipe.

Cilantro Lime Rice Recipe

3 cups of uncooked White Basmati Rice
3 cups of water
4 small fresh limes juiced
1/2 red bell pepper chopped
1/2 green bell pepper chopped
2 tbsp canola oil
1/2 tsp salt
1/4 tsp garlic powder
1/2 tsp ground cumin
1/2 – 2/3 cup of fresh cilantro roughly chopped

Cook the Rice

The rice is the foundation of this recipe. Steamed rice is best, and if you have a rice cooker, have at it! If you don’t, this How to Make Rice Without a Rice Cooker recipe has been a reliable standby for years. The link jumps straight to the recipe, but feel free to scroll up and read the overview. Notice that they use a 1:1 ratio for cooking the rice. So while their recipe uses 2 cups of rice to 2 cups of water, for my Cilantro Lime Rice recipe, I use 3 cups of uncooked rice, so I increased it to 3 cups of water in the referenced rice recipe. Everything else for cooking the rice is the same. My favorite pot for cooking the rice this way is the Cuisinart Stainless Steel 5.5 Quart Pot which has a glass lid. Once the rice is ready, set it aside for 5-10 minutes. Be sure to break up the rice as indicated in Step 3/Note 3 of the rice recipe I link to.

Prepare the Lime Juice Seasoning Blend

In a medium mixing bowl, add the oil, salt, garlic powder, and ground cumin. Mix well. Add the juice from the limes to the oil mix. I usually include some of the lime pulp, and I opt to omit the lime zest. Mix well. Add the chopped red and green bell pepper to the lime juice seasoning blend and allow it to marinate for about 10 minutes.

Assemble the Cilantro Lime Rice

Pour the lime seasoning blend over the rice in the pot and mix thoroughly. Afterwards, stir in the fresh cilantro until it is evenly distributed through the rice. That’s it! Let me know in the comments if you give this recipe a try. Enjoy!
