Although Thanksgiving has passed, I still consider this the season for *Giving Thanks. For the sake of clarity, I use thankful, grateful, and gratitude interchangeably in this post. Despite all that’s going on, there is much to be thankful for. Especially given the pandemic, having our health and our mobility are truly reasons to be thankful. While being grateful is an individual experience, having a regular Gratitude Ritual is a great practice.

The Benefits of Gratitude
Recently I found an online article entitled Vitamin G by JJ Virgin. Nope, it’s not another pill. 😀 Vitamin G is what she calls gratitude. I love how she shares the multiple benefits of being grateful, as well as her various dosage ideas. Check it out! Giving Thanks for the Meal
“… and the hands that prepared it.” Being thankful for the food provided, and the love/energy that goes into the preparation is a good habit for the holidays and everyday. I am often guilty of overlooking this practice. For the holidays, I contribute to the meal, but my Mom still does the majority of the cooking. We are all thankful for this on multiple levels: Because she does it, she’s able to do it, and (we all agree) she’s awesome at it!
Giving Thanks Recipes
To close off this post, I want to share a couple of recipes. The Cilantro Lime Rice that I make for the holidays has replaced the Macaroni and Cheese I previously made. I decided to re-do my original recipe post. I have learned much since that original post, and I have included more details on how I changed the Cilantro Rice Salad recipe into what it is now. 😉
Finally, I also have a post-holiday Sweet Potato Treat that I make at home using leftover sweet potatoes. Actually I make it throughout the year as well, but I definitely make it whenever I have my Mom’s leftover sweet potatoes! Enjoy!
