Occasionally, I take this salad to gatherings. People who are hesitant about it, are often pleasantly surprised that they like it, and request the recipe. Here it is:
Kale Salad Recipe
1 16 oz container of Organic Baby Kale. This will seem like too much…it’s not. 🙂
1 12 oz jar Trader Giotto’s (Trader Joe’s) Bruschetta
Wash the kale and spin the excess water out in a large salad spinner. After transferring the kale to a large bowl, pour the entire jar of bruschetta over the greens. Toss the kale greens and make sure the bruschetta is evenly distributed. Cover and marinate overnight in the refrigerator. The next morning, or a few hours before serving, toss the greens again to move the greens currently on top of the bowl, to the bottom of the bowl. Voila! Kale Salad. This is an excellent and tasty way to get your dark leafy greens (and tomatoes) into your daily diet. Get creative and make it your own!
NOTE: Instead of the bruschetta, I have also marinated the kale greens with my favorite salad dressing (i.e. Goddess). I use about ¾ of a small 8 oz bottle.
